Roasted Red Pepper Hummus

It’s Spring and that gets our little family excited to eat outside and gets mama craving lot’s of fresh veggies. What better to pair with veggies then a delicious easy dip? This Roasted Red Pepper Hummus comes together fast and easy and turns out great time and time again. My little guy absolutely loves helping make it and eats it by the spoonful! 

What you will need: 

  • 1 whole Red Bell Pepper (Charred in oven)
  • 1 can Chick peas/ Garbanzo Beans (same thing) strain the can and give a quick rinse
  • 1/3 cup avacado oil or olive oil 
  • 3/4 tsp Cumin
  • 1 tsp Pink salt or sea salt
  • 2 cloves garlic minced or 2 tsp pre-minced
  • 1/4 cup lemon juice
  • 1/4 cup tahini

Instructions: 

  • Turn oven on Broil HIGH
  • cut and de-seed Red Bell Pepper. spray with avocado oil
  • place on parchment paper on a baking sheet skin facing up for charring
  • Place on the top of the rack. Broil for 6-8 minutes until the skin starts charring and they become fragrant
  • In Food processor combine all other ingredients, chick peas, avocado oil, cumin salt, garlic, lemon juice, tahini. blend on HIGH until it is smooth
  • Remove the Red Bell Peppers from oven once charred and let them rest for 10 minutes.

     

    TIP: you can place them in a zip lock bag and zip it shut to help “steam” them. This makes it extra easy to remove skin but is not a must.

  • After they have rested on counter or in zip lock bag peal off the skin and add to food processor. blend on HIGH until very smooth.
  • Pour into air tight container to store in fridge good for 4-5 days
