Lazy Summer Meal Ideas

I often refer to summer as my family’s lazy time of the year. We love to just hang out a little more. Some summer days we even move at a slower pace.

When it comes to planning out summer meals, I also take the lazy approach. I will mostly cook our dinner meals out on our backyard barbeque or grill.

Summer might be a couple weeks away, but I am so ready to plan those lazy summer meals. I am ready to get outside and cook on the grill.

Outdoor cooking can be more than just barbecuing hamburgers, chicken, and steaks. There are many simple and tasty meals you can prepare right on our grills and barbeques.

Today I want to share some of my favorite lazy summer meals my family loves. Maybe your family will love these lazy summer meals too!

Think Outside the Oven

Meals that your typical bake or broil in your oven can be often grilled or barbecued. What are some meals that you might cook that you can cool outdoors right on your grill or barbeque?

Plan, Prepare, & Freeze It

I am always about using freezer meals. It saves you tons of time and even money! During the summertime, I like to spend less time in the kitchen cooking, so I create a meal plan that includes freezer meals that we can prepare ahead of time, stick in the freezer, and take out ahead of time, and barbeque or grill them.

Some freezer meals I like to do is marinating meat meals. You can pour marinates with meat into Ziplock bags and then throw them in the freezer. You can even prepare pizza dough and freeze those too if you like to make grilled pizzas during the summer. I also love to chop up all our vegetables and then put them into the freezer. When I need them for a meal, I take them out and they are already chopped and prepared for our lazy summer meal.

As you plan your meals, think about what meals your family loves and how you can prepare them ahead of time to make your summer cooking easier. Remember you can freeze a lot of things to have ahead of time.

Morning Routine

Begin your summer days in the morning by thinking about dinner. In the morning time, you are going to want to pull out your meal that is in the freezer. Get it ready to be defrosted. You then want to prepare anything else that you can in the morning. If you are needing a salad or making kabobs, you are going to want to chop and prepare those ingredients in the morning. So that when it is time for dinner you aren’t spending a long period of time doing it all at once when the weather is hot, and you rather be outside soaking up the sun.

Lazy Summer Meal Ideas for You

Here are some of my favorite lazy summer meal ideas!

1. Chicken Quesadillas

I love to get a rotisserie chicken from Costco, or you can even get one from your local grocery store. You then put the chicken quesadilla in foil and put it on the grill. These are perfect!

2. Grilled Nachos

Just like chicken quesadillas, you can grill nachos. Just put all your favorite nacho toppings on foil and let the grill do all the work for you.

3. Grilled Stew

These are also called Hobo Packs. These are super comforting. You throw all of your favorite ingredients together into one foil pack. Hobo packs include meat, such as ground beef, chicken, or steak. Also included in Hobo Packs are vegetables like carrots, bell peppers, peas, and corn. You can add potatoes, onions, mushrooms, and your favorite seasonings.

I love these meals because everyone can add what toppings they want. This meal works for everyone to enjoy whatever they want. Kids will also love making their own too.

4. Kabobs

Kabobs are a great lazy summer meal. You can add just about anything on a stick. Add your favorite meat, vegetables, and more to create a delicious summertime family meal.

5. Potatoes

Slice up all your potatoes into thin slices. Throw them all onto a foil pack. Then add your seasonings, lots of butter, and wrap it up and let the grill cook away some delicious potatoes.

6. Grilled Vegetables with Seasoning

Chop up your vegetables and put them into a grilling basket you can put on your barbecue or grill. Don’t forget the seasoning! You can also put them into a foil package with seasoning too. Your kids might love eating vegetables by creating a new way of cooking them.

7. Grilled Fruit

This is one of my favorite ones. Grilled fruit is tasty and makes it even juicier. The flavor when you grill fruit is something you need to try for yourself. You can also put the grilled fruit in a foil package to cook. One of my favorite fruits to grill is pineapple or watermelon.

8. Backwards Dinner

Why not have breakfast for dinner? This is one of my favorite meals to cook for my family and it is super simple! You can actually cook your eggs, bacon, hash browns, and pancakes right outside on your grill or barbeque. Make sure you have the right pieces of equipment to do it.
