I love discovering new ways to spice up my life and my palate. Southeast Asia is one of my favorite regions of the world and it’s hard to beat their explosive combinations of flavors. During a trip to Malaysia and Singapore a few years ago, I fell for Malaysian cuisine. I love the vibrant colors, variant textures and layers of flavor found in the Malaysian dishes.
Spice up your cooking in 2015 by adding a Malaysian twist to your dishes. Malaysian cuisine is colorful, exotic and full of enticing flavors stemming from a blend of Malay, Chinese, and Indian food traditions, with Indonesian, Thai, Portuguese and Middle Eastern influences. Rice and noodles are key staples in preparing many Malaysian dishes; they are easily worked into many recipes such as Chef Dale Talde’s Lobster Laksa. Malaysian Laksa is a delicious rich noodle dish. The word Laksa derives from the Sanskirt “lakhsa” which means “a lot”, perfect for serving family and friends at a dinner party.
Lobster Laksa
2 lb. lobster bodies, roasted
3 cloves garlic
1 small onions
2 Thai chili
2 oz. galangal
1 tomato 2 stalks lemongrass, bruised
2 Kaffir lime Leaves
2 oz. vegetable oil
3 c. coconut milk
2 T. fish sauce
1 T. belachan
