  baconMonday: Bacon Cheeseburger Calzones

  • Oh, boy! All the flavors of a bacon cheeseburger are tucked into a flaky crescent pocket.

Ingredients

4 slices bacon, cut into 1/4-inch pieces
1 lb lean (at least 80%) ground beef
1/4 cup dried instant minced onion
1/4 cup chopped hamburger pickle slices
1/4 cup ranch dressing
2 Italian plum tomato, thinly sliced, if desired
4 slices (3/4 oz each) American or Cheddar cheese, each cut in half
2 cans (8 oz) Pillsbury® refrigerated crescent dinner rolls
1 egg, beaten

Steps

1 Heat oven to 375°F. In 10-inch nonstick skillet, cook bacon over medium heat 2 minutes. Add ground beef and onion; cook, stirring occasionally, until beef is thoroughly cooked; drain if necessary. Stir in pickles and ranch dressing.
2 Unroll dough and separat each can into 4 rectangles; place on ungreased cookie sheet. Press each into 7×4-inch rectangle, firmly pressing perforations to seal.
3 Spoon about 1/3 cup ground beef mixture onto one end of each rectangle. Top each with tomato slices and 1 piece of cheese. Fold dough over filling; press edges with fork to seal (sandwiches will be full). Brush tops with egg.

4 Bake 15 to 20 minutes or until deep golden brown. Immediately remove from cookie sheet. Serve warm

tacoTuesday: Grands! Easy Taco Melts

A tender, flaky biscuit wraps around your favorite taco fillings in an easy, flavor-packed hot sandwich.

Ingredients

 1 package (1 oz) Old El Paso® taco seasoning mix

2/3 cup water

1 1/2 cups Old El Paso® Thick ‘n Chunky salsa

1 lb lean (at least 80%) ground beef, cooked, drained

1 can (16.3 oz) Pillsbury® Grands!® biscuits

1 cup shredded Monterey Jack cheese or Mexican cheese blend (4 oz)

1 cup sour cream, if desired

Steps

1 In medium saucepan, cook taco seasoning mix, water, 1/2 cup of the salsa and cooked ground beef until thickened.
2 Press each biscuit into 6-inch round. Spoon 1/3 cup meat mixture and 1 tablespoon cheese onto center of each round. Fold dough in half over filling; press to seal. Place on greased cookie sheet.

3 Bake at 375°F 9 to 14 minutes or until golden brown. Serve with remaining salsa, cheese and sour cream

lasagnaWednesday: Three Cheese-Sausage Lasagna

Skip the fancy layers and save time with packaged noodle mix, and you’ll end up with this ultra-cheesy lasagna faster than you’d expect.

Ingredients

1 lb Italian turkey sausage, casings removed
1 box Hamburger Helper® lasagna
2 cups water
1 medium red bell pepper, chopped (1 cup)
1 cup sliced fresh mushrooms (3 oz)
1 small zucchini, diced (1 cup)
1 cup ricotta cheese
1/2 cup shredded mozzarella cheese (2 oz)
1/4 cup grated Parmesan cheese

Steps

1 Heat oven to 375°F. In 10-inch skillet, crumble sausage. Cook over medium-high heat about 8 minutes, stirring frequently, until sausage is no longer pink; drain well.
2 In ungreased 11×7-inch (2-quart) microwavable dish, stir sauce mix (from Hamburger Helper box) and water until blended. Microwave uncovered on High 1 to 2 minutes or until sauce is thickened. Stir in uncooked pasta (from Hamburger Helper box), sausage, bell pepper, mushrooms and zucchini.
3 In small bowl, mix ricotta, mozzarella and Parmesan cheeses. Spoon cheese mixture evenly over sausage mixture.
4 Bake uncovered 40 to 50 minutes or until top is golden brown and sauce is bubbly.

 

 potThursday: Grands! Chicken Pot Pie Puffs

Chicken pot pie with just 4 ingredients? It couldn’t get any easier!

Ingredients

2 cups Green Giant® frozen mixed vegetables, thawed
1 cup diced cooked chicken
1 can (10 3/4 oz) condensed cream of chicken soup
1 can (16.3 oz) Pillsbury® Grands!® Flaky Layers refrigerated biscuits

Steps

1 Heat oven to 375°F. In medium bowl, combine vegetables, chicken and soup; mix well.
2 Press each biscuit into 5 1/2-inch round. Place 1 round in each of 8 greased regular-size muffin cups. Firmly press in bottom and up side, forming 3/4-inch rim. Spoon a generous 1/3 cup chicken mixture into each. Pull edges of dough over filling toward center; pleat and pinch dough gently to hold in place.
3 Bake at 375°F 20 to 22 minutes or until biscuits are golden brown. Cool 1 minute; remove from pan.

 

pizzaFriday: Spicy Chicken Pizza Roll-up

Easy pizza crust takes on a new form rolled and baked around a bursting-with-flavor filling.

Ingredients

8 slices packaged precooked bacon
1 lb ground chicken
1 can (10 oz) diced tomatoes with green chiles, drained
2 teaspoons dry ranch dressing mix (from 1-oz package)
1 can Pillsbury® refrigerated classic pizza crust
2 cups shredded Italian cheese blend (8 oz)
1 tablespoon Crisco® Pure Olive Oil

Steps

1 Heat oven to 375°F. In 12-inch nonstick skillet, cook bacon until crisp. Remove bacon; leave any drippings in skillet.
2 Add chicken to drippings; cook over medium-high heat, stirring frequently, until no longer pink. Stir in tomatoes. Crumble bacon and add to skillet. Drain extra liquid if necessary; stir in dressing mix.
3 Unroll dough on nonstick cookie sheet; sprinkle with 1 cup of the cheese. Spread chicken mixture over cheese. Top with remaining 1 cup cheese. Starting on 1 long side, roll up; turn seam side down. Brush with olive oil.
4 Bake 23 to 27 minutes or until deep golden brown. Cover with foil to prevent overbrowning if necessary. Let stand 5 minutes. Cut on diagonal to serve.
