Crock Pot Chicken Fajitas

fajitaSimple and yummy are the meals I love to prepare in my crock pot for my family.  Taste of home has a great selection of easy to prepare Crock Pot recipes on their website.  Here is one that is sure to please your hungry family.

Ingredients

1pound boneless skinless chicken breast halves
1can (14-½ ounces) diced tomatoes with mild green chilies, drained
1 eachmedium green, sweet red and yellow peppers, julienned
1medium onion, halved and sliced
2teaspoons ground cumin*
2teaspoons chili powder*
1garlic clove, minced*
¼teaspoon salt*
½cup water or chicken broth
6flour tortillas (8 inches), warmed
Shredded lettuce, chopped tomatoes, sour cream and cheese optional

 

Alternately, you can use McCormick’s Fajita/Taco seasoning packet

Directions

  • In a 3-qt. slow cooker, combine the chicken, beans, tomatoes, peppers, onion and seasonings. Cover and cook on low for 5-6 hours or until chicken is tender.
  • Remove chicken; cool slightly. Shred chicken and return to the slow cooker; heat through.
  • Spoon about 3/4 cup chicken mixture down the center of each tortilla. Top with lettuce and tomatoes if desired. Yield: 6 servings
