“Ebelskivers” My Delicious Danish Pancakes

ableskiverMy latest addiction all began when my oldest daughter introduced me to The Old European restaurant in Spokane, Washington. It quickly became a family favorite stop during our college visits with our daughters.  The menu is filled with mouth watering choices that it make it difficult to choose which meal  one will eat for breakfast.  My all time favorite is their Ebelskivers, a  traditional Danish pancakes in a ball shape, Ebelskivers are solid like a pancake but light and fluffy like a popover.

With this new Ebelskiver addiction I began thinking how could I make these at home – then it occurred to me that I could use our panBabycakes cake pop maker.  So, I began Googling for a recipe to begin my adventure of making our first homemade Ebelskivers.

A success it was, we even got a little fancy and began filling them with with Nutella or raspberry jam, which only increased  my addiction a long with now addicting my children to these little breakfast goodies.

Ready to begin a new addiction in your home – here is the recipe we use:

Ebelskivers Recipe

Ingredients

  • 1 cup  all purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 teaspoons sugar
  • 2 eggs, separated
  • 1 cup milk
  • 3 tablespoons  butter, melted

Fillings:  Jam or Nutella

Toppings: Powder sugar, jam, syrups, fresh fruit.

Directions

In a small bowl, mix together flour, baking powder, and salt, then set aside. I

In a large bowl, mix together egg yolks, milk, and 2 tablespoons melted butter until mixed well.

Stir in dry ingredients. Mixture will be lumpy—do not over mix

In a small bowl, beat egg whites with an electric mixer until stiff for about 3 minutes.

Fold egg whites into batter

Cook your Ebelskivers with either a Ebelskiver pan or use a Babycakes Cake Pop Machine

Use of ebelskiver pan:

Place Ebelskiver pan over medium high heat. Add a small amount of  butter to each well in your pan, then add 1 -2  tablespoon of your Ebelskiver batter.  Allow your  Ebelskivers to cook until bottoms are golden, about 4 minutes, flip and continue to cook until tops are also golden. Remove and serve immediately with toppings of your choice.

Use of Babycakes Cake Pop Machine

Follow instruction manual to pre-heat your machine.  Then fill   each well in your pan, then add 1 -2  tablespoon of your Ebelskiver batter.  Close lid and cook for 3 to 4 minutes.  Be sure to read your Babycake cake pop manual for how to use and additional tips.

 Filled : To make filled Ebelskivers fill each well with  1 tablespoon batter then top each well with 1 teaspoon of jam or Nutella , then top with another 1 tablespoon batter.
