Crock Pot Breakfast Goulash

My kids call it breakfast goulash when we make an all in one breakfast dish of eggs, potatoes and breakfast meat mixed in with spices, onion sand pepper so when I discovered you can make a breakfast meal in the crock pot we affectionately named our recipe  Crock Pot Breakfast Goulash .  This is a simple recipe to make ahead and wake up to breakfast in the crock pot – Just turn it on before you go to bed and it’s ready when you wake up.

 

Crock Pot Breakfast Goulash

Ingredients:

    • 1 bag frozen hash browns
    • 12 eggs
    • 1 cup milk
    • 1 tablespoon ground mustard
    • 1 tsp garlic powder
    • 1 lb sausage, bacon or ham or any combination
    • 1 medium diced onion
    • 1 bell pepper any color
    • 3/4 c sour cream
    • 3/4 c milk
    • Salt and pepper
    • 16 oz. bag shredded cheddar cheese

Step #1 – Cook meat, drain and break or crumble into small pieces. Set aside. Saute onion and peppers in a small amount of the left over oil from cooking the nmeat. Cook until onions are soft.

Step #2 – Spray  crock pot with non-stick spray

Step #3 – Layer potatoes, meat and vegetables in the crock pot . Sprinkle with half the cheese. Repeat with second layer

Step #4 –  Mix eggs, milk, sour cream and seasonings in a separate bowl . Pour mixture over the top of layered ingredients in crock pot.

Step #5 – Cook on low for eight hours.

Step #6  – Enjoy!
