Crockpot Bacon Cheese Potatoes

These Cheesy potatoes make a great side dish for a Summer BBQ or pot luck and are simple to make.

Crockpot Bacon Cheese Potatoes


Prep time: 15 mins
Cook time: 12 hours
Total time: 12 hours 15 mins
Serves: 6
Ingredients

1/4 pound bacon, diced – bake it first in the oven so that it is “done” and browned then dice it and place in the crock pot.
2 medium onions, thinly sliced
4 medium potatoes, thinly sliced (or if you use a new potato then halve)
1/2 pound cheddar cheese, thinly sliced (shredded is fine)
salt and pepper
butter
Green Onions (optional)

Instructions

Line crockpot with foil, leaving enough to cover the potatoes when finished – this will help to not stick and to steam the potatoes.
Layer half each of the bacon, onions, potatoes and cheese in crockpot. Season to taste with salt and pepper and dot with (real) butter.
Repeat layers of bacon, onions, potatoes and cheese. Dot with butter.
Cover with remaining foil.
Cover and cook on low for 10-12 hours.

  1. Did not quite look like this as potatoes looked darker. Tasted great. No oven used so my kitchen was not hot on a day that was already hot.

  2. I’m trying this today. I did not get it on early enough for a 12 hour cook, so I’m trying it on high for 6 hours. We will see.

  3. looks great , i’m re posting this to my site for others…12 hours seems a little long to cook potato , but i’m trying it anyway. crock pot is the best invention created in the last hundred years (besides an ipad) lol.
