Caribbean Jerk Chicken
2 1/2 lbs chicken breast cut into pieces
2 tbsp brown sugar
2 tbsp vegetable oil
2 tbsp soy sauce
1 tsp five spice
1 tsp cinnamon
1 tsp thyme
1/2 tsp ground red pepper flakes
1 envelope Italian salad dressing mix
Mix ingredients in a small bowl or pyrex dish. Add chicken and cover with marinade. Pour chicken and marinade into a freezer bag, then freeze.
Night before cooking day remove from freezer and thaw in refrigerator. On cooking day remove chicken from freezer bag and dispose the empty bag with left over marinade in it. You can choose to Barbeque chicken or bake in your oven at 375 degrees for about 60 minutes or use your oven broiler to broil chicken pieces.
