Good Table 7With my busy schedule I like meals that are quick, easy and don’t require a lot of work. I enjoy breaded restaurant style proteins but I never really think to go through the whole process of breading myself because I’m often intimated by the work involved. I really like The Good Table Thai Peanut flavor. It’s zesty, and flavorful and has a great Asian flare. I made it this past weekend with a Loaded Veggie & Pineapple Thai Friend Rice which was the prefect complement to it (recipe below). The process for the chicken was so easy.  I just covered the chicken in the coating sauce, tossed in the crust mix, and baked. This coating would be great on pork as well. It was so great to see that my family loved it!

Here’s the recipe for my fried rice:

Loaded Veggie & Pineapple Thai Friend Rice

Good Table 6Ingredients:
4 cups of jasmine rice (we like brown jasmine)4 tbsp olive oil
5 cloves of garlic chopped or crushed
4 eggs
1 large carrot cubed
1/2 cup frozen or canned corn
1 large onion diced
8oz canned pineapple with juice
4 tbsp of soy sauce (add more to taste as needed)
3 spring onions
1 large tomato cubed
5 tbsp of lemon or lime juice

Good Table 8Directions:
Cook jasmine rice and put aside for later.
Heat oil in wok and add garlic once hot. Cook for 1 minute.
Add eggs and stir until fully cooked.
Add onion, carrot, and corn. Stir until cooked.
Add pineapple with juice and stir until heated up.
Add rice, soy sauce, and lemon/lime juice. Stir until all is fully heated.
Add tomato, spring onion and stir for a minute.
Serve and enjoy.
