THE ODD LIFE OF TIMOTHY GREEN’S Leafy, Full of Life Recipes!

Now you don’t know what the movie is fully about yet… but you will.  I was inspired to come up with some leafy recipes that are good for you…. good for the heart, the soul and life.  You should always try to buy the darker the lettuce as possible.  Iceburg lettuce pretty much does nothing for you and thats a shame.  You think you are eating healthy because you are eating a “salad” but what you are eating is a lot of nothing.  Instead eat lettuce that is full of vitamins to keep you healthy and strong.  You are also building healthy eating habits for your children as well.

Little known facts:  (Per average serving – 1 cup)

*Iceberg lettuce contains 2% of our daily Iron, 4% of our daily vitamin A, and 1 gram of protein.

*Romaine Lettuce contains 3% of our daily Iron, 82% of our daily vitamin A, 3% of Calcium, 19% of vitamin C, 60% of vitamin K, and 16% of folate.

*Spinach contains contains 30% of daily fiber, 10 grams of protein, an abundance of vitamins A, C and K that are well over 100% of your daily requirements, also significant quantities in spinach is folate, vitamins E and B6.  34% daily calcium, 54% daily iron, 67% daily magnesium, 54% daily potassium and 152% daily manganese.  WOW!

So because of this GREAT news on spinach I am going to give you some fabulous easy recipes that you and your family will love.  We eat spinach every day and my children think of it as the normal now.  It is so healthy for you and tastes so good… why not!  Go ahead and poor on your low-fat dressing over spinach and enjoy it in a good and healthy way!

Spinach Omelet

Eggs
Spinach
Cheese (i use mozzarella but you can use cheddar)
Onions (1/4 cup or less diced)
Salt & Pepper
Olive Oil
*You can add meat if you like.. we add turkey bacon chopped up.
Depends on the size of pan you have will depend on how many eggs to use, but use a pan that you can put in the oven.  Whip up your eggs and add a bit of salt and pepper.  Set aside.  Turn on oven to broil.  Dice up some onions and put in pan with a little bit of olive oil and sauté.  Once done take out and put the eggs in.  Heat should be on med.  No need to touch the eggs… let sit for a bit and add the caramelized onions over top.  Then add a layer of spinach (cover the whole omelet).  Add cheese on top of that.  Put in oven for about 5 min.  Take out and fold in half.   ** Putting omelet in oven will puff it up and make it super fluffy.

Strawberry Salad

1 bag of baby spinach
1/2 shallot, finely chopped
2 Tbs raspberry vinegar or apple cider vinegar
2 Tbs extra virgin olive oil
Strawberries (about a cup or more, thinly sliced)
1/3 C. sliced almonds or pecan halves
2 oz gorgonzola’s cheese

Whisk together in a bowl the shallots and vinegar.  As you are whisking slowly add in the olive oil.  Add the remainder of ingredients and toss together.  Serve immediately.

Basic Spinach Salad

(this is our typical night salad)
Spinach
Diced Tomato
Shredded Cheese (little bit)
Extra’s (whatever we have on hand… carrots, mushrooms, avocado, green peppers, black olives, red onion, hard boiled egg, etc…)

Then we just add our favorite dressing on top.  I like low-fat Caesar.  Husband likes low-fat Asian, and the kids eat ranch.  Add some sunflower seeds on top instead of croutons and you have a nice HEALTHY salad!

Spinach & White Bean Salad

Package of baby spinach
1 can of Navy or Cannellini beans (drained)
1/2 red onion, thinly sliced
2 1/2 Tbs Dijon mustard
2 1/2 Tbs Apple cider vinegar
1 tsp Italian seasoning
In large mixing bowl combine onion and beans.   Slice spinach in thin slices and add to beans.
In separate bowl whisk together Dijon, Cider and Italian seasoning till well combined.  Poor over over bean/spinach mixture and toss carefully.
*Can top with crispy bacon bits or sliced tomato!

- On your hamburger
- In your taco
- Inside your quesadilla
- Built in your sandwich
- Throw it into your stews/crockpots
- Toss it with noodles
- Use it in Lasagna
- On top of pizza
- Use it in wraps

  2. Love spinach here… I actually planted 1/2 a row of spinach so we can enjoy salads and a variety of other dishes..
